My Eggplant & Sesame Udon / Mes Udon aux Aubergines & Sésame



The Ingredients (for 2)
- udon noodles
- 1 eggplant
- 2 tbsp sesame oil
- 2 tbsp sesame grains
- fresh coriander
- 1tbs miso paste
- 2 tbsp soy sauce

The Recipe
  1. Cook your udon noodles in boiling water with the miso paste in it.
  2. Cut the eggplant into small cubes. Bake them into a pan with the sesame oil until they become soft.
  3. Add the soy sauce, sesame grains and coriander.
  4. Mix the noodles in and serve right away.

Les Ingrédients (pour 2 personnes)
- des nouilles udon
- 1 aubergine
- 2 cs huile de sésame
- 2 cs graines de sésame
- coriandre fraîche
- 1 cs pâte miso
- 2 cs sauce soja

La Recette
  1. Faites cuire vos udon dans de l'eau bouillante avec la pâte miso.
  2. Coupez l'aubergine en dés et faites les revenir dans l'huile de sésame jusqu'à ce qu'ils deviennent bien moelleux.
  3. Ajoutez la coriandre, les graines de sésame et la sauce soja.
  4. Mélangez avec les nouilles et servir aussitôt.

A few weeks ago had these Udongnoodles the first time. Totally new noodle experience. So, Im happy for every new recipe with these thick tasty noodles. I will try yours for sure.

I love Udon Noodles and make it often with vegetables in it! It is quick, and healthy. I had not made it with eggplant so this gives me a reason to make it again soon!
